Restaurateurs of the Arctic zone of the Russian Federation actively promote northern national cuisine in the Murmansk region. The Kola Arctic presents unusual dishes at food festivals in other regions, and for the northerners themselves, there are establishments on the territory of the region where you can taste unusual delicacies. Polar entrepreneurs invest in establishments specializing in Arctic cuisine. They are also ready to present their ideas already at the federal level. They are supported in various ways by the government of the Murmansk region in their efforts.
Gastronomic festivals
A chef from the Murmansk region presented his restaurant and defended the honor of his native region at the gastronomic travel festival “Across the Seas”. The event took place in Petropavlovsk-Kamchatsky.
Festival participants were able to taste the most unusual dishes of Murmansk Arctic cuisine. Dishes featured included halibut indigirka with cod liver on artisan bread, spicy salmon with soaked cranberries, “Northern Lights” salt cod with burnt potatoes and more.
Access at the federal level
The menu for the March 2023 state dinner included a dish of Arctic cuisine – Murmansk halibut on julienned vegetables. It was prepared in the Faceted Chamber of the Grand Kremlin Palace, where a state dinner was held on behalf of Russian President Vladimir Putin in honor of His Excellency Mr. Xi Jinping, President of the People’s Republic of China .
This approach to dinner design has become a new step in promoting international food tourism. In the Arctic, work continues in this area.
Other destinations
Students from local specialized educational institutions are now learning to create unique dishes of Arctic cuisine. In addition, polar entrepreneurs are increasingly opening new restaurants, the distinctive feature of which is precisely the national cuisine of the Russian North.
According to the Ministry of Information Policy of the Murmansk region, there are currently more than 40 catering establishments in the Kola Arctic that work with Arctic menus.
