A book about tasty and half-forgotten food: a book of old recipes for cooks was published in Kostroma

The press service of the regional administration informs that a collection of old culinary recipes “Cuisine of the Kostroma province of the 19th-20th centuries” has been published in Kostroma. This edition will be a textbook for culinary students who will study their subject from the perspective of teaching local history.

And it turns out that there is something to study in our region: even the names of ancient Kostroma dishes are impressive on their own – sponge soup with turnips, porcini mushrooms and beet pate; vanilla fish soup; spinach dumplings with marinated pike; wild boar with chicken offal, etc. Local historians and teachers of educational institutions have been collecting these 30 unique traditional Kostroma recipes from across the region for about two years.

A new manual for culinary specialists in Kostroma has been published in a print run of 2,000 copies – all books will be donated to specialized educational institutions and libraries in the region. And dishes from this collection will most likely soon appear on the menu of Kostroma restaurants.
