In Goa, the monsoon is a season of abundance, when the fields turn green and the rice harvest becomes a quiet celebration of the land, its people and its traditions. This August, House of Nomad at Taj Holiday Village Resort & Spa, Goa, marks ” Konsachem” with a culinary experience that places Goa’s most cherished grain at the centre of the table.
From 5th to 23rd August 2026, the seasonal menu explores rice beyond its familiar place in Goan kitchens, bringing together regional flavours, contemporary interpretations and creative techniques. It is a menu that moves comfortably between the traditional and the unexpected, reflecting the many ways rice has travelled across cultures and cuisines.

The selection begins with dishes such as Fish Rice Cakes with Mango Salsa, pairing delicate fish and herbs with rice and the brightness of fresh mango, while Chicken Picante with rice vinegar gel and Goan rice crisps takes the grain in a more playful direction. For those seeking a Goan expression, Goan Vegetable Curry with Red Rice and Goan Prawn / Fish Curry with Red Rice bring coconut, kokum and local rice together in a distinctly coastal combination.
The experience extends to the bar, where rice becomes an intriguing ingredient in its own right. Spirited beverages such as Rice Sesame Rose and Midnight Paddy explore rice through infusion, washing and syrup, while the mocktail selection includes a Rice Blossom Elixir, Horchata and Peach Rice Smoke Spritz.
Dessert keeps the harvest theme alive with Pineapple Coconut Rice Pudding, combining creamy rice, coconut milk, pineapple and lime, alongside the familiar comfort of Mango Sticky Rice.
More than a seasonal menu, Konsachem offers a contemporary lens on Goa’s agricultural heritage bringing together local flavours, culinary craftsmanship, creative brewing and mixology in a celebration of the grain that has long sustained the state.
