Scientists have found that the taste of whiskey changes with the addition of 20% water

May 2, 2023

Adding water to whiskey at a percentage of 1 to 5 can change the original taste of the drink. The study was conducted by scientists from the University of Washington.

Water added to whiskey in the form of ice, according to some people, cools the drink and enhances its taste. But depending on the ratio of the two liquids, the taste and aroma changes.

In an experiment, US scientists gave volunteers to taste 25 varieties of whiskey, where water was added. Participants rated the original taste and the taste of diluted alcohol.

As soon as the proportion of water in the drink exceeded 20%, it became almost impossible to distinguish whiskey varieties. Scotch whiskey, according to the volunteers, had a smoky aroma, and after dilution – more fruity. American bourbons resembled vanilla and oak, with water – corn.

This is due to the fact that water in different concentrations lifts up a certain composition of hydrophilic and hydrophobic components that allow us to feel the aroma. Newspaper.ru .
